The Seasons 52 kitchen is built around a continually changing array of the freshest seasonal vegetables, fruits, fish and meats available. Selecting products that are at the peak of their flavor ensures that each dish will have the best taste possible, without relying on added fats or high-calorie sauces as flavor enhancers. The name, Seasons 52, was derived from the fact that every week, all year long, different products are continually coming into their own seasons, so the menu is designed to change at least that often.

Fruits of temperate climates are almost universally borne on trees or woody shrubs or lianas. They will not grow adequately in the tropics, as they need a period of cold (a chilling requirement) each year before they will flower. The apple, pear, cherry, and plum are the most widely grown and eaten, owing to their adaptability. Many other fruits are important regionally but do not figure prominently in commerce. Many sorts of small fruit on this list are gathered from t
he wild, just as they were in Neolithic times.

On Fridays, all the classes visit the "produce stand" -- a table of fresh fruits and vegetables set up in an empty spot in the center. Each child gets a paper lunch bag and the chance to choose one fruit or vegetable to take home. The produce stand was developed with help from food service manager Jeanette McMillion, who stocks the stand weekly with a variety of fruits and vegetables, including onions, sweet potatoes, pears, oranges and apples. Not surprisingly, the produce stand is a weekly highlight for kids, who proudly tote their perishables home to their parents.

All fresh, frozen, dried, or canned fruits and vegetables count toward your fruit and vegetable goal. Fruits and vegetables (with the exception of olives, avocados, and coconut) are naturally low in fat. Canned, dried, and frozen foods are ... good options. Look for fruit without added sugar or syrups and vegetables without added salt, butter, or cream sauces.

The future of tropical fruits in South Florida seems very bright, especially considering the involvement of local growers in the research process and their commitment to funding these efforts. The aggressive marketing campaign which has accompanied increases in production is exemplary and should serve as a model for other industries. The major long term problem facing South Florida growers includes the lack of land for future expansion, and likely decreases of current agricultural areas due to urbanization. The policy of establishing fruit fly-free areas in the Caribbean and elsewhere will have a significant impact on Florida production, though the cost of getting this fruit to U.S. markets may outweigh some of the advantages of cheaper land and labor in other countries.

Unlike some of the other specialty tropical fruits, papayas are affected by several insect, disease and nematode pests. The major insect pests are: papaya fruit fly (Toxotrypana curvicada Gerst.), papaya webworm (Homolapalpia dalera), and papaya whitefly (Trialeurodes variablilis). Philephedra scale (Philephedra tuberculosa( (Nakahara and Gill)) and 2-spotted mite [Tetranychus urticae (Koch)] are sometimes important as well. Papayas are replanted annually because of the severity of papaya ringspot virus, which is green peach aphid [Myrus persicae (Sulz.)] vectored, in Dade County. Fruits and vegetables are clearly an important part of a good diet. Almost everyone can benefit from eating more of them, but variety is as important as quantity. No single fruit or vegetable provides all of the nutrients you need to be healthy. The key lies in the variety of different fruits and vegetables that you eat.

[M]ost fruits are surprisingly nutritious. Though not as nutrient-dense as vegetables, fruits are an important source of vitamins, minerals, and enzymes. Some fruits are more nutritious than others, but with fruits, as with vegetables and grains, variety is the spice of life. Nutrients that one fruit lacks, another fruit provides. Fructose is the principle sugar in most fruits, though sucrose is the principle sugar in others, such as oranges, melons, and peaches. Fructose is absorbed slowly into the bloodstream, so fruit gives you energy without triggering the ups and downs of the insulin cycle.

The type of fruit will ... make a difference in its nutrient value, as all fruits are definitely not equal in this respect. A great rule of thumb is to avoid hybrid varieties, which are fruits that have been altered by humans. Typically hybrid fruits contain more sugar than regular varieties so they taste sweeter and can be picked out because they don’t contain seeds (seedless watermelon, seedless grapes, etc.). Below I’ve listed some of the healthiest fruits available in terms of nutritional value along with some of their nutritional qualities. You will still want to choose fruits based on your metabolic type, but this list will provide a guideline to some of the generally healthier fruits you can eat.
